Murder of a Mentor : San Antonio Grieves the Violent Death of Ron Acosta At Age 78 Community Icon

A Legacy Cut Short : San Antonio Grieves the Tragic Murder of Las Palapas Founder Edward “Ron” Acosta

The San Antonio community is reeling after the heartbreaking and senseless murder of Edward Ron Acosta, the beloved 78-year-old founder of the iconic Las Palapas restaurant chain. Acosta, known not only for building a beloved Tex-Mex empire but also for his generosity and impact across the city, was found murdered inside his home on Tuesday morning. His nephew, David Ruiz, 39, has been charged in connection with the brutal act. SAN ANTONIO, TX — July 1, 2025

What should have been a peaceful retirement surrounded by the fruits of a lifetime of hard work ended in unspeakable tragedy. Authorities confirmed that Acosta died from multiple stab wounds in what appears to be a targeted domestic attack. Ruiz was arrested shortly after and is currently being held in custody without bond.

News of Acosta’s murder has sent shockwaves through San Antonio, where Las Palapas has long been more than a restaurant—it’s been a cornerstone of culture, comfort, and community. Founded in the 1980s, Las Palapas grew under Acosta’s vision from a small family eatery into a beloved chain known for its welcoming atmosphere and signature flavors. Acosta became a fixture in the city, known just as much for his heart as his business sense.

He built something that brought people together,” said longtime friend and local restaurateur Maria Soto. Ron was kind, wise, and always believed in helping others. He never forgot where he came from.”

Acosta’s passion extended far beyond the kitchen. Over the years, he quietly funded scholarships, supported local youth organizations, and offered employment opportunities to those who needed a second chance. His impact was immeasurable — and his absence will be felt in every corner of the community he helped nourish.

The alleged betrayal by a family member adds another layer of pain and confusion for those closest to Acosta. Family members, still in shock, have asked for privacy during this devastating time. In a brief statement, the Acosta family said, “We are shattered by this tragedy and ask for your prayers and respect as we grieve the loss of a man who meant so much to so many.”

Las Palapas locations across the city have draped black ribbons and dimmed lights in tribute to their founder. A candlelight vigil is planned outside the original location later this week, where friends, employees, and loyal customers will gather to celebrate Acosta’s life and mourn his death.

Ron Acosta built more than a business — he built a legacy of love, unity, and resilience. That legacy will live on in the hearts of every person he fed, helped, and inspired.
